- 1 cup unsalted butter
- 2 cups sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp salt
- Ice cream of choice
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13 pan.
- Melt butter and mix with sugar.
- Add eggs one at a time, then vanilla.
- Whisk dry ingredients separately and combine.
- Pour into pan and bake 25–30 minutes.
- Cool completely and cut into squares.
- Sandwich ice cream between two brownie squares.

- Freeze brownies before assembling for cleaner sandwiches.
