  • Streusel:
  • 1 cup flour
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 6.5 tbsp melted butter
  • Muffins:
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup sugar
  • 1 tbsp lemon zest
  • 2 eggs
  • 2/3 cup Greek yogurt
  • 1/3 cup oil
  • 1 tsp vanilla
  • 2 tbsp lemon juice
  • 1 1/3 cups blueberries
  • 1 tbsp flour

Instructions

  1. Preheat oven to 400°F and line muffin tray.
  2. Make streusel topping and chill.
  3. Mix dry ingredients.
  4. Rub lemon zest into sugar, then add eggs, yogurt, oil, lemon juice, vanilla.
  5. Combine wet and dry ingredients.
  6. Fold in blueberries coated in flour.
  7. Fill muffin cups, top with streusel and blueberries.
  8. Bake 5 min at 400°F, then 13–15 min at 375°F.

Notes

  • Do not overmix batter.
  • Frozen blueberries work well.
  • Store airtight up to 3 days.
