- Streusel:
- 1 cup flour
- 1/2 cup sugar
- 1/2 tsp cinnamon
- 6.5 tbsp melted butter
- Muffins:
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2/3 cup sugar
- 1 tbsp lemon zest
- 2 eggs
- 2/3 cup Greek yogurt
- 1/3 cup oil
- 1 tsp vanilla
- 2 tbsp lemon juice
- 1 1/3 cups blueberries
- 1 tbsp flour
Instructions
- Preheat oven to 400°F and line muffin tray.
- Make streusel topping and chill.
- Mix dry ingredients.
- Rub lemon zest into sugar, then add eggs, yogurt, oil, lemon juice, vanilla.
- Combine wet and dry ingredients.
- Fold in blueberries coated in flour.
- Fill muffin cups, top with streusel and blueberries.
- Bake 5 min at 400°F, then 13–15 min at 375°F.
Notes
- Do not overmix batter.
- Frozen blueberries work well.
- Store airtight up to 3 days.
