- 1 lb fresh strawberries
- 1 cup sugar
- 1/2 cup oil
- 2 eggs
- 1 cup Greek yogurt or sour cream
- 1 tsp vanilla
- 2 cups flour
- 2 1/2 tsp baking powder
- pinch of salt
- powdered sugar (for topping)
Instructions
- Preheat oven to 375°F and prepare pan.
- Dice and slice strawberries.
- Whisk eggs and sugar until pale.
- Add oil, yogurt, and vanilla.
- Add dry ingredients and mix gently.
- Layer batter and strawberries in pan.
- Bake 50–60 minutes until set.
- Cool and dust with powdered sugar.
Notes
- Use a 9-inch springform pan.
- Do not overmix batter.
- Check doneness in center before removing.
