- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp cloves
- 1 tsp salt
- 1 lb shredded carrots
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 4 eggs
- 3/4 cup vegetable oil
Cream Cheese Frosting
- 8 oz cream cheese, softened
- 3 tbsp butter, softened
- 3 1/2 cups powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease two loaf pans.
- Whisk dry ingredients together in a bowl.
- In another bowl, mix sugars, eggs, and oil until smooth.
- Combine wet and dry mixtures, then fold in carrots.
- Divide batter into pans and bake for about 60 minutes.
- Cool completely before frosting.
- Beat frosting ingredients until fluffy and spread over cooled loaves.
Notes
- Do not overmix batter to keep loaf tender.
- Store refrigerated for up to 3 days or freeze for longer storage.
- Walnuts add crunch but are optional.
