- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/2 tsp salt
- 2 large eggs
- 1 cup granulated sugar
- 2 tbsp all-purpose flour
- 1/3 cup fresh lime juice (about 3–4 limes)
- 1 tbsp lime zest
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment paper.
- Crust: Combine flour, powdered sugar, and salt. Cut in butter until coarse crumbs form. Press into pan and bake 18-20 minutes until lightly golden.
- Filling: Beat eggs, granulated sugar, flour, lime juice, and zest until combined. Pour over baked crust.
- Bake 20-22 minutes until filling is set.
- Cool to room temperature, refrigerate at least 2 hours.
- Dust with powdered sugar, cut into bars, and serve.
Notes
- Use fresh lime juice for best flavor.
- Store in the refrigerator for up to a week.
- Best served chilled.
