The Cake

  • 1 1⁄2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1⁄2 tsp ginger
  • 1⁄2 tsp cardamom
  • 1⁄2 tsp nutmeg
  • 2 tsp baking powder
  • 2 large eggs
  • 8 tbs melted butter
  • 1 cup sourdough discard
  • 1⁄2 cup sugar
  • 2-3 large apples

The Streusel Topping

  • 1⁄2 cup rolled oats
  • 1⁄2 cup all-purpose flour
  • 1⁄2 cup sugar
  • 6 tbs cold butter

The Custard Sauce

  • 4 large egg yolks
  • 1⁄2 cup sugar
  • 1 cup whole milk
  • 1 tsp vanilla

Instructions

  1. In a large mixing bowl sift together the flour, cinnamon, ginger, cardamom, nutmeg, and baking powder.
  2. In a separate bowl whisk together the eggs, melted butter, sourdough discard, and sugar.
  3. Add the dry ingredients to the wet ingredients a little at a time, mixing until everything is incorporated and no lumps remain.
  4. Peel apples, remove core, slice into 1/4 inch pieces, and fold into the batter.
  5. In a small bowl, stir together oats, flour, and sugar; cut in butter until pea-sized bits form and coat fully.
  6. Pour batter into a greased 9″ springform pan, spread evenly, top with streusel, and bake at 350°F (180°C) for 60 minutes.
  7. For custard, whisk together egg yolks, sugar, milk, and vanilla; cook over medium-low heat while stirring constantly until thickened (6–10 minutes).
  8. Slice cake and serve with warm custard sauce.
