Ingredients

  • 1 lb lean ground beef
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 15 oz cans tomato sauce
  • 1 tsp Italian seasoning
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup cheddar cheese, grated
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Cook ground beef and onion in a large skillet over medium-high heat until browned, about 10 minutes. Add garlic and cook 1 more minute.
  3. Stir in tomato sauce and Italian seasoning, simmer for 5 minutes. Season with salt and pepper, remove from heat.
  4. Cook egg noodles according to package instructions, drain and set aside.
  5. In a large bowl, combine sour cream and cottage cheese. Add cooked noodles and season with salt and pepper. Stir until combined.
  6. Layer half of the noodle mixture in the baking dish, top with half of the meat sauce. Repeat layers.
  7. Sprinkle grated cheddar cheese evenly on top. Bake 30 minutes until bubbly and cheese melted.
  8. Let cool 10 minutes before serving. Enjoy!

Notes

  • Use freshly grated cheddar cheese for best flavor.
  • You can swap cottage cheese for ricotta if desired.
  • For a richer flavor, add a pinch of paprika or smoked paprika to the meat sauce.
