Ingredients

  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 5-8 drops yellow food coloring (optional)
  • For rolling: 1/4 cup sugar, 3/4 cup powdered sugar

Instructions

  1. Mix flour, baking soda, and salt in a bowl; set aside.
  2. Beat butter and sugar until fluffy. Add egg, lemon juice, zest, vanilla, and food coloring; mix well.
  3. Gradually add dry ingredients; mix until incorporated. Cover and chill 2 hours.
  4. Preheat oven to 350°F. Line baking sheets with parchment paper.
  5. Scoop dough into balls. Roll in sugar then powdered sugar, spacing 2 inches apart.
  6. Bake 10-12 minutes. Cool 5 minutes on baking sheet, then transfer to rack to cool completely.
