Ingredients

2 cups quick oats

1/2 cup unsalted butter or coconut oil

1/2 cup sweetened condensed milk or melted white chocolate

1/4 cup granulated sugar (optional, for more sweetness)

Zest of 1 lemon

2 tbsp fresh lemon juice

1 tsp vanilla extract

Pinch of salt


Instructions

1. Line a baking tray with parchment paper.

2. In a saucepan over low heat, melt butter and condensed milk together until smooth.

3. Stir in sugar (if using), lemon juice, zest, vanilla, and salt. Mix well.

4. Fold in the oats until fully coated in the citrus mixture.

5. Scoop tablespoonfuls onto the tray and gently shape into mounds.
