Ingredients
1/2 cup unsalted butter
2 cups quick oats
1/2 cup milk
1 1/2 cups granulated sugar
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1/4 teaspoon salt
Instructions
1. In a saucepan over medium heat, combine butter, milk, and sugar.
2. Bring to a full rolling boil and let it boil without stirring for exactly 60 seconds.
3. Remove from heat. Stir in lemon zest, lemon juice, salt, and oats.
4. Mix until all oats are evenly coated.
5. Drop spoonfuls onto parchment-lined tray and flatten gently.
6. Refrigerate for 30–45 minutes until set.
Notes
Use quick oats for best texture.
Pulse rolled oats if that’s all you have.
Always zest the lemon before juicing.
For extra brightness, add a dash of lemon extract.
