Description

A quick, flexible, and delicious no-bake cookie bar recipe that comes together in minutes—no oven required.


Ingredients

2 cups rolled oats

1 cup almond butter or sunflower seed butter

1 cup honey or maple syrup

1/2 cup chocolate chips (optional)

1/2 cup dried fruit or shredded coconut (optional)

1 tsp vanilla extract (optional)


Instructions

1. Line an 8×8-inch baking dish with parchment paper.

2. In a large bowl, mix oats, chocolate chips, and any extras.

3. In a separate bowl, stir nut butter and honey (or syrup) until smooth.

4. Add the wet mixture to the dry and combine until well coated.

5. Press the mixture firmly into the prepared dish and smooth the top.

6. Refrigerate for at least 2 hours until firm.

7. Cut into bars and store chilled.

Notes

For firmer bars, chill overnight.

To make these nut-free, use sunflower seed butter.

Store in the fridge for up to 1 week or freeze for longer storage.
