  • 8 tbsp butter, room temperature
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 15 oz whole milk ricotta, drained
  • Fresh berries for garnish (optional)

Instructions

  1. Grease a 9-inch springform pan with butter or shortening.
  2. Melt butter in a small microwave-safe bowl. Mix graham cracker crumbs and brown sugar, then stir in butter until crumbs are coated. Press firmly into the bottom and sides of the pan. Freeze for 15–20 minutes.
  3. In a large bowl, beat cream cheese, powdered sugar, and vanilla with an electric mixer until smooth. Add ricotta and mix until creamy.
  4. Spoon filling into chilled crust, spread evenly, cover with plastic wrap, and refrigerate at least 4 hours.
  5. Remove springform ring, transfer cheesecake to a plate, and garnish with fresh berries before serving.
