- 1 cup plain full-fat Greek yogurt
- 1/4 cup unsalted butter, melted
- 2 eggs
- 2 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup maple syrup
- 1 1/2 cups all-purpose flour
- 1 cup mini chocolate chips
Instructions
- Preheat oven to 350°F. Spray a mini muffin pan with nonstick spray.
- Whisk together flour, salt, baking powder, and baking soda in a mixing bowl.
- In another bowl, whisk Greek yogurt, maple syrup, vanilla, and melted butter. Add eggs and mix well.
- Fold dry ingredients into wet until just combined. Do not overmix.
- Fold in mini chocolate chips.
- Distribute batter into muffin pan and top with extra chocolate chips if desired.
- Bake 12-14 minutes or until a toothpick comes out clean. Cool 2-3 minutes in the pan, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter to keep muffins tender and light.
