  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup plain Greek yogurt
  • 1/4 cup honey
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 tablespoon poppy seeds

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, whisk Greek yogurt, honey, egg, lemon juice, lemon zest, and vanilla until smooth.
  4. Gently fold wet ingredients into dry ingredients until just combined. Stir in poppy seeds.
  5. Pour batter into prepared pan and spread evenly.
  6. Bake for 20-25 minutes, or until edges are golden and a toothpick inserted in the center comes out clean.
  7. Let cool completely before cutting into bars.
