  • 1 ¼ cups all-purpose flour
  • 1 ¼ cups old-fashioned rolled oats
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¾ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 14 oz can sweetened condensed milk
  • 2 tablespoons finely grated lemon zest
  • ½ cup fresh lemon juice
  • 2 large egg yolks

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan with baking spray.
  2. In a large bowl, combine flour, oats, salt, and baking soda.
  3. Stir in granulated sugar and brown sugar.
  4. Mix melted butter and vanilla extract, then add to dry ingredients and stir until combined.
  5. Press half the mixture firmly into the bottom of the prepared pan and bake for 15 minutes.
  6. While crust bakes, whisk together condensed milk, lemon zest, lemon juice, and egg yolks.
  7. Pour lemon filling over baked crust, sprinkle remaining crumble mixture evenly on top.
  8. Bake an additional 20–22 minutes, until lightly golden.
  9. Cool completely, refrigerate until firm. For cleaner slices, chill thoroughly or freeze briefly.
  10. Optional: Dip bottom half of frozen bars in melted white chocolate, refrigerate until set.
