- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 1/2 cups sugar
- 1 cup unsalted butter, softened
- 1 tablespoon fresh lime juice
- 2 teaspoons lime zest
- 5 large eggs
- 1 cup whole or 2% milk
- Key Lime Glaze: 2 cups powdered sugar, 2 tablespoons milk, 1 teaspoon lime zest
Instructions
- Heat oven to 350°F and grease and flour two 9×5-inch loaf pans.
- Sift or whisk together flour, baking powder, and salt in a medium bowl.
- Cream sugar and butter until light and fluffy, then add lime juice, lime zest, and eggs; beat 2-3 minutes.
- Add flour mixture alternately with milk on low speed until smooth.
- Pour batter evenly into prepared pans.
- Bake 55–60 minutes until toothpick comes out clean; cool 20 minutes, remove from pans, cool completely on wire rack.
- Make glaze by whisking powdered sugar, milk, and lime zest to drizzle-able consistency; pour over cooled cakes.
Notes
- Use a cooling rack with foil or parchment underneath to catch excess glaze.
- Allow glaze to set before transferring to serving tray.
