Ingredients

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 1/2 cups sugar
  • 1 cup unsalted butter, softened
  • 1 tablespoon fresh lime juice
  • 2 teaspoons lime zest
  • 5 large eggs
  • 1 cup whole or 2% milk
  • Key Lime Glaze: 2 cups powdered sugar, 2 tablespoons milk, 1 teaspoon lime zest

Instructions

  1. Heat oven to 350°F and grease and flour two 9×5-inch loaf pans.
  2. Sift or whisk together flour, baking powder, and salt in a medium bowl.
  3. Cream sugar and butter until light and fluffy, then add lime juice, lime zest, and eggs; beat 2-3 minutes.
  4. Add flour mixture alternately with milk on low speed until smooth.
  5. Pour batter evenly into prepared pans.
  6. Bake 55–60 minutes until toothpick comes out clean; cool 20 minutes, remove from pans, cool completely on wire rack.
  7. Make glaze by whisking powdered sugar, milk, and lime zest to drizzle-able consistency; pour over cooled cakes.
