- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 and 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Whisk together flour, baking soda, and salt; gradually mix into wet ingredients until a soft dough forms.
- (Optional) Chill dough for 30 minutes for thicker cookies.
- Roll dough into 1-tablespoon balls and place on baking sheets.
- Press a fork into each ball to create a criss-cross pattern.
- Bake 9–11 minutes until edges are golden.
- Cool 2 minutes on sheet, then transfer to wire rack.
Notes
- Chilling the dough is optional but recommended for better texture and less spreading.
- Use crunchy peanut butter for a more rustic cookie.
- Cookies freeze well, baked or unbaked, for prep-ahead baking.
