- 2.5 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup unsalted butter, cold and cubed
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg, beaten
- 14 ounces sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 large egg yolk
Instructions
- Preheat oven to 350°F (175°C) and line a 9×9-inch pan with parchment paper.
- Whisk together flour, sugar, baking powder, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Stir in beaten egg until crumbly but evenly moistened.
- Press half the crumb mixture into the pan to form the base layer.
- Whisk sweetened condensed milk, lemon juice, lemon zest, and egg yolk; pour over base.
- Sprinkle remaining crumb mixture on top.
- Bake 40–45 minutes until edges are lightly golden and center is set.
- Cool completely, then refrigerate at least 2 hours before slicing into 16 squares.
Notes
- Use a sharp knife to slice cleanly after chilling.
- Store in an airtight container in the fridge for up to 5 days.
- Add powdered sugar dusting for extra presentation.
