  • 2.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, cold and cubed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg, beaten
  • 14 ounces sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 large egg yolk

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch pan with parchment paper.
  2. Whisk together flour, sugar, baking powder, and salt.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Stir in beaten egg until crumbly but evenly moistened.
  5. Press half the crumb mixture into the pan to form the base layer.
  6. Whisk sweetened condensed milk, lemon juice, lemon zest, and egg yolk; pour over base.
  7. Sprinkle remaining crumb mixture on top.
  8. Bake 40–45 minutes until edges are lightly golden and center is set.
  9. Cool completely, then refrigerate at least 2 hours before slicing into 16 squares.
