- 1 ½ cups all-purpose flour
- 1 cup plain unsweetened Greek yogurt
- ½ cup honey or maple syrup
- ¼ cup freshly squeezed lemon juice
- Zest of 2 lemons
- 2 tsp baking powder
- ½ tsp salt
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan or line with parchment paper.
- Whisk together flour, baking powder, and salt in a bowl.
- Mix Greek yogurt, honey or maple syrup, lemon juice, and zest in another bowl until smooth.
- Gradually fold wet ingredients into dry until just combined.
- Pour batter into loaf pan and smooth the top.
- Bake 45–50 minutes until a toothpick comes out clean. Cool before slicing.
Notes
- Use fresh lemon juice for best flavor.
- Optional: top with fresh berries or a light glaze.
