Instructions
- Prepare the Crêpe Batter: In a mixing bowl, combine the flour, eggs, milk, melted butter, sugar, vanilla extract, and salt. Whisk until smooth and let rest for 30 minutes.
- Cook the Crêpes: Heat a non-stick skillet over medium heat and lightly grease. Pour ~1/4 cup batter, swirl to coat. Cook 1-2 minutes, flip, cook 30 seconds. Repeat for remaining batter.
- Prepare the Chocolate Filling: In a small saucepan, heat heavy cream until simmering. Remove from heat and add dark chocolate chips and butter. Stir until smooth and creamy.
- Assemble the Crêpes: Place each crêpe flat, spoon chocolate filling in the center, roll tightly to enclose.
