  • 1 ½ cups graham cracker crumbs
  • 2 tablespoons brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, room temperature
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • ½ cup full-fat eggnog
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground nutmeg
  • 2 large eggs, room temperature

Instructions

  1. Preheat oven to 325°F (163°C). Line a 9×9-inch pan with parchment paper, lightly greased.
  2. Mix graham cracker crumbs, brown sugar, cinnamon, nutmeg, and melted butter; press into pan and bake 8–10 minutes. Cool slightly.
  3. Beat cream cheese until smooth. Add sugar and flour; mix well.
  4. Add eggnog, vanilla, and nutmeg. Mix on low until smooth.
  5. Add eggs one at a time, mixing gently. Do not overmix.
  6. Pour filling over crust, smooth top, tap to remove bubbles.
  7. Bake 35–40 minutes until center is set but slightly jiggly. Cool 1 hour, then refrigerate at least 4 hours or overnight.
  8. Lift bars from pan, slice, and dust with nutmeg if desired.
