These buttery Strawberry Oatmeal Crumble Bars are bursting with fresh strawberries. Easy to prepare with a one-pan crust and crumble topping.

  • Crust and Crumble Topping: 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon salt
  • Strawberry Layer: 2 cups coarsely chopped fresh strawberries
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Preheat oven to 350°F. Line an 8-inch square pan with foil and spray with cooking spray.
  2. Melt butter in a microwave-safe bowl.
  3. Add flour, oats, sugars, and salt. Mix until sandy with larger crumble pieces.
  4. Set aside 1 cup of mixture for topping. Press remaining mixture into pan to form crust.
  5. In a large bowl, combine strawberries, sugar, lemon juice, and cornstarch. Spread over crust.
  6. Sprinkle reserved crumble topping evenly over strawberries.
  7. Bake 50–55 minutes until edges are set and crumble is pale golden. Cool at least 1 hour before slicing.

Notes

  • Do not use quick-cook or instant oats; they will make mixture too dry.
  • Store bars airtight at room temperature up to 1 week, in fridge up to 10 days, or freezer up to 6 months.
