- Crust and Crumble Topping: 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 3/4 cup old-fashioned oats
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1/2 teaspoon salt
- Strawberry Layer: 2 cups coarsely chopped fresh strawberries
- 1/3 cup granulated sugar
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
Instructions
- Preheat oven to 350°F. Line an 8-inch square pan with foil and spray with cooking spray.
- Melt butter in a microwave-safe bowl.
- Add flour, oats, sugars, and salt. Mix until sandy with larger crumble pieces.
- Set aside 1 cup of mixture for topping. Press remaining mixture into pan to form crust.
- In a large bowl, combine strawberries, sugar, lemon juice, and cornstarch. Spread over crust.
- Sprinkle reserved crumble topping evenly over strawberries.
- Bake 50–55 minutes until edges are set and crumble is pale golden. Cool at least 1 hour before slicing.
Notes
- Do not use quick-cook or instant oats; they will make mixture too dry.
- Store bars airtight at room temperature up to 1 week, in fridge up to 10 days, or freezer up to 6 months.
