Strawberry Layer:

  • 6 cups sliced strawberries (~2 lbs)
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1/4 cup cornstarch

Crumble Topping:

  • 3/4 cup rolled oats
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 cup very cold unsalted butter
  • 1/2 tsp sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. Toss strawberries with sugar, vanilla, lemon juice, and cornstarch; spread evenly in pan.
  3. Mix oats, flour, brown sugar, vanilla, and salt; cut in cold butter until mixture resembles small peas or crumbs.
  4. Sprinkle crumble topping over strawberries.
  5. Bake 45-50 minutes until topping is golden and strawberry filling bubbles.
  6. Cool 10-15 minutes; serve warm or chilled, optionally with ice cream or whipped cream.

  • Chill butter before grating for easier preparation.
