Strawberry Layer:
- 6 cups sliced strawberries (~2 lbs)
- 1/2 cup sugar
- 1/2 tsp vanilla extract
- 1 tbsp lemon juice
- 1/4 cup cornstarch
Crumble Topping:
- 3/4 cup rolled oats
- 3/4 cup all-purpose flour
- 3/4 cup brown sugar
- 1 tsp vanilla extract
- 1/2 cup very cold unsalted butter
- 1/2 tsp sea salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan.
- Toss strawberries with sugar, vanilla, lemon juice, and cornstarch; spread evenly in pan.
- Mix oats, flour, brown sugar, vanilla, and salt; cut in cold butter until mixture resembles small peas or crumbs.
- Sprinkle crumble topping over strawberries.
- Bake 45-50 minutes until topping is golden and strawberry filling bubbles.
- Cool 10-15 minutes; serve warm or chilled, optionally with ice cream or whipped cream.
Notes
- Chill butter before grating for easier preparation.
- Serve warm or chilled according to preference.
- Reheat chilled crumble at 350°F for 15 minutes or microwave in 20-30 second intervals.
