Chewy S’mores Cookie Bars combining graham crackers, chocolate, and mini marshmallows into a gooey, crowd-pleasing dessert.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup graham cracker crumbs
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • Extra chocolate chips and mini marshmallows for topping, to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.
  2. Cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix dry ingredients into butter mixture until just combined. Do not overmix.
  6. Fold in graham cracker crumbs and chocolate chips evenly.
  7. Spread half the dough in the prepared pan. Sprinkle mini marshmallows over it, then cover with remaining dough gently.
  8. Top with extra chocolate chips and marshmallows as desired.
  9. Bake 25-30 minutes until golden brown and a toothpick inserted comes out clean.
  10. Cool 10 minutes in pan, then lift out using parchment and let cool completely before slicing.

Notes

  • Optional: Add chopped nuts or use different chocolates for variation.
