- 5 cups rhubarb (fresh or frozen, chopped)
- 3/4 cup granulated sugar
- 1/4 cup corn starch
- 1/2 cup cold butter (cubed)
- 1/2 cup brown sugar
- 1 1/2 cups rolled oats
- 1/2 cup whole wheat flour
Instructions
- Preheat the oven to 375°F and lightly grease an 8×8 or 9×9-inch baking pan.
- In a mixing bowl, combine rhubarb, sugar, and corn starch. Pour into the prepared baking pan.
- In another bowl, mix butter, brown sugar, oats, and flour until crumbly. Spread over the rhubarb mixture.
- Bake for 35-40 minutes until golden brown and bubbly. Let cool for 10 minutes before serving.
