- 1/2 tsp baking soda
- 1/2 cup (113 g) unsalted butter, softened
- 1/2 cup (100 g) granulated sugar
- 1/2 cup (100 g) brown sugar
- 1 egg
- 1/2 tsp vanilla extract
- 2 ripe peaches, diced
- 1/3 cup peach preserves
- 3 tbsp sanding sugar
- 1/4 tsp cinnamon
Instructions
- Preheat oven to 375°F (190°C) and line baking sheets.
- Whisk flour, salt, and baking soda.
- Cream butter and sugars, then mix in egg and vanilla.
- Combine dry and wet ingredients.
- Fold in peaches and preserves.
- Drop spoonfuls onto trays.
- Sprinkle cinnamon sugar on top.
- Bake 11–13 minutes until golden and set.
- Cool before serving.

- Use ripe but firm peaches to avoid excess moisture.
- Cookies soften over time—best fresh.
- Store airtight with parchment between layers.
- Can be frozen after baking.
