Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets.
  2. Whisk flour, salt, and baking soda.
  3. Cream butter and sugars, then mix in egg and vanilla.
  4. Combine dry and wet ingredients.
  5. Fold in peaches and preserves.
  6. Drop spoonfuls onto trays.
  7. Sprinkle cinnamon sugar on top.
  8. Bake 11–13 minutes until golden and set.
  9. Cool before serving.
