Bright, chewy, and full of lemony zing, these no bake cookies come together in minutes with oats, fresh lemon juice, and pantry staples.


Ingredients

2 cups rolled oats

1/3 cup coconut oil or butter

1/3 cup maple syrup or honey

Zest of 1 lemon

Juice of 1 lemon (about 2 tbsp)

Pinch of salt

Optional: 1/2 tsp cinnamon or 1/4 cup shredded coconut


Instructions

1. Line a baking tray or plate with parchment paper.

2. In a small saucepan, melt the coconut oil over low heat.

3. Stir in maple syrup, lemon zest, lemon juice, and salt. Heat just until smooth.

4. In a large bowl, pour the lemon mixture over rolled oats.

5. Mix well until oats are fully coated.

6. Scoop tablespoon-sized portions onto the tray. Flatten if desired.

7. Chill in the fridge for at least 30 minutes.

8. Serve chilled or let sit 10 minutes at room temperature for a softer bite.

9. Store in an airtight container in the fridge for up to 1 week.
