Ingredients
- 2 cups chopped pecans
- 1/2 cup evaporated milk
- 2 cups brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups shredded coconut
- 1 teaspoon flaked sea salt
- 1/2 cup corn syrup
- 1/2 cup unsalted butter
Instructions
- In a large saucepan, combine evaporated milk, brown sugar, corn syrup, granulated sugar, and butter. Stir over medium heat until melted and smooth.
- Boil the mixture for about 3 minutes without stirring until it reaches the softball stage (235°F).
- Remove from heat and stir in vanilla extract.
- Add chopped pecans and shredded coconut; mix until thickened (about 3-5 minutes).
- Let the mixture cool slightly before scooping onto a parchment-lined baking tray.
- Sprinkle flaked sea salt on top of each cookie and allow to cool completely before storing.
