- 8 oz cream cheese, softened
- 1 tbsp salted butter, softened
- 2 cups powdered sugar
- 1½ cups graham cracker crumbs, divided
- ½ tsp vanilla extract
- ½ cup rainbow sprinkles
Instructions
- Line a baking sheet with parchment paper.
- Beat cream cheese and butter until smooth and fluffy, 2-3 minutes.
- Gradually add powdered sugar and beat until creamy.
- Mix in vanilla extract.
- Fold in 1 cup graham cracker crumbs.
- Chill mixture for 30 minutes.
- Roll into 1-inch balls using damp hands.
- Roll balls in remaining graham cracker crumbs, then coat with sprinkles.
- Chill 1 hour before serving.
