Ingredients
- Cake: 1 standard package white or vanilla cake mix, 1 cup lime yogurt or sour cream (not fat free), 1/2 cup oil, 4 eggs, 1 Tbsp finely grated lime peel, 3 Tbsp lime juice
- Glaze: 2 cups powdered sugar (add more if needed), 3 Tbsp melted butter, 3-4 Tbsp lime juice, 1-2 Tbsp milk (adjust consistency), pinch of salt
Instructions
- Preheat oven to 350°F. Coat 12-cup bundt pan or 10-inch fluted tube pan with non-stick spray and dust with flour.
- Beat cake mix, yogurt or sour cream, oil, eggs, lime peel, and lime juice in large bowl with electric mixer on low 1 minute, then medium 2 minutes until combined. Spread evenly in pan.
- Bake 40-44 minutes until toothpick comes out clean. Cool in pan 15 minutes, then remove to wire rack to cool completely.
- Mix powdered sugar, melted butter, lime juice, milk, and pinch of salt with a whisk until smooth. Spoon over cooled cake. Garnish with additional lime peel if desired.

- Adjust glaze thickness by adding more powdered sugar or milk/lime juice as needed.
