  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup old fashioned oats
  • 1 cup plus 2 tbsp all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp molasses or honey
  • Vanilla Icing: 1/2 cup powdered sugar, 1–2 tbsp milk, 1/4 tsp vanilla

Instructions

  1. Preheat oven to 350°F and line an 8×8 inch pan with parchment paper.
  2. Melt butter and cool; pulse oats until slightly chopped.
  3. Whisk oats, flour, baking soda, cinnamon, and salt.
  4. Mix butter with sugars until sandy; add egg, vanilla, and molasses.
  5. Fold in dry ingredients gently; transfer to pan.
  6. Bake 20–24 minutes until edges set and golden.
  7. Cool completely before icing. Whisk icing ingredients and spread over bars.
  8. Allow icing to set before slicing into squares.

Notes

  • Store tightly covered at room temperature up to 4 days.
  • May freeze bars (without icing) up to 3 months; defrost before icing.
