- 1/2 cup unsalted butter, melted and cooled
- 1 cup old fashioned oats
- 1 cup plus 2 tbsp all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp molasses or honey
- Vanilla Icing: 1/2 cup powdered sugar, 1–2 tbsp milk, 1/4 tsp vanilla
Instructions
- Preheat oven to 350°F and line an 8×8 inch pan with parchment paper.
- Melt butter and cool; pulse oats until slightly chopped.
- Whisk oats, flour, baking soda, cinnamon, and salt.
- Mix butter with sugars until sandy; add egg, vanilla, and molasses.
- Fold in dry ingredients gently; transfer to pan.
- Bake 20–24 minutes until edges set and golden.
- Cool completely before icing. Whisk icing ingredients and spread over bars.
- Allow icing to set before slicing into squares.
Notes
- Store tightly covered at room temperature up to 4 days.
- May freeze bars (without icing) up to 3 months; defrost before icing.
