Ingredients
Scale
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 cup water
- 1/8 teaspoon salt
- 1 teaspoon pure vanilla extract
- Optional: 1/2 teaspoon espresso powder
- Optional: pinch of flaky sea salt
- Optional: 1/4 teaspoon cinnamon
Instructions
- In a medium saucepan, whisk together cocoa powder, sugar, water, and salt until fully combined.
- Place the saucepan over medium heat and whisk continuously as the mixture warms to prevent clumps.
- Bring the mixture to a gentle simmer and cook for 3 to 5 minutes, stirring often, until slightly thickened and glossy.
- Remove from heat and stir in the vanilla extract until smooth.
- Allow the syrup to cool completely, it will thicken as it cools.
- Transfer to a clean glass jar with a lid and refrigerate until ready to use.
Notes
- Whisk constantly while heating to prevent graininess.
- Do not boil rapidly, a gentle simmer creates the best smooth texture.
- The syrup thickens more as it cools, so avoid overcooking.
- Store in an airtight glass jar in the refrigerator for up to 2 weeks.
- Reheat gently in short microwave bursts or over low heat and stir before serving.
