- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla
- 1/2 cup all-purpose flour (or gluten-free/almond flour)
- 1/3 cup cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 1 cup diced rhubarb
- 1/2 cup dark chocolate chips
- 1/2 cup chopped walnuts or pecans
Instructions
- Preheat oven to 375°F. Line an 8×8-inch pan with parchment and lightly butter.
- Whisk sugar, oil, eggs, and vanilla in medium bowl.
- In large bowl, whisk flour, cocoa powder, baking powder, and salt.
- Stir wet into dry until just combined. Fold in rhubarb, chocolate chips, and nuts.
- Spread batter evenly in pan. Bake 20-25 minutes, or until toothpick comes out clean. Cool 10 minutes, cut into 9 squares.
Notes
- If using frozen rhubarb, thaw and dry well, adding 10-15 minutes to baking time.
