Ingredients

- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 1/2 cups sugar
- 3 eggs
- 1 cup vegetable oil
- 2 tsp vanilla extract
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1/2 cup walnuts (optional)
- Frosting: cream cheese, butter, powdered sugar, vanilla
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 pan.
- Mix dry ingredients in one bowl.
- Beat sugar, eggs, oil, and vanilla in another bowl.
- Combine wet and dry ingredients.
- Fold in carrots, pineapple, and walnuts.
- Bake 35–40 minutes until toothpick comes out clean.
- Cool completely.
- Beat frosting ingredients until smooth.
- Spread frosting over cooled cake and garnish if desired.
Notes
- Drain pineapple well to avoid soggy cake.
- Best flavor develops after resting overnight.
- Store refrigerated up to 1 week.
