  • 4 tablespoons butter
  • 200 g bittersweet chocolate
  • 4 large egg whites
  • ½ cup sugar
  • 2 whole large eggs
  • 4 large egg yolks
  • ⅓ cup sugar
  • 1 teaspoon vanilla extract
  • 100 ml whipping cream

Instructions

  1. Preheat oven to 350°F. Line bottom of 9-inch springform pan with parchment paper.
  2. For cake: stir butter into chocolate, reheating if needed; let cool.
  3. Whisk 4 egg whites until foamy; gradually add ½ cup sugar until whites hold shape but not stiff.
  4. Whisk 2 whole eggs and 4 yolks with ⅓ cup sugar and vanilla; stir in chocolate mixture.
  5. Fold whites into chocolate mixture in three additions. Pour into pan and bake 35–40 minutes until cake rises and center is set.
  6. Cool on wire rack; remove carefully from pan.
  7. For icing: whip cream with vanilla until firm but not stiff; fold in melted chocolate.
  8. Fill top of cake with icing and spread toward edges; arrange Easter eggs on top.
