  • 1 tsp cornstarch
  • 1 tbsp water

Instructions

  1. Prepare the Blueberry Swirl: In a small saucepan, combine blueberries, sugar, cornstarch, and water. Cook over medium heat, stirring occasionally, until thickened (about 5 minutes). Mash slightly and let cool.
  2. Make the Cheesecake Filling: Beat cream cheese, sugar, and vanilla extract until smooth. Set aside.
  3. Prepare the Cookie Dough: Cream butter, granulated sugar, and brown sugar until light and fluffy. Add egg and vanilla. In another bowl, whisk flour, baking soda, and salt. Gradually mix dry ingredients into wet until a soft dough forms.
  4. Assemble the Cookies: Preheat oven to 350°F (175°C). Line baking sheet with parchment paper. Scoop 2-tablespoon portions 2 inches apart. Make a small well in each.
