  • 1 1/4 cups quick oats
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 cup brown sugar
  • 3/4 cup melted butter
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 1/3 cup brown sugar
  • 3 tbsp cornstarch
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tsp lemon zest
  • 1/4 cup strawberry preserves

Instructions

  1. Preheat oven to 350°F and line an 8×8 inch baking dish with parchment paper.
  2. Combine oats, flour, salt, baking powder, and brown sugar. Stir in melted butter to form a crumbly mixture.
  3. Press 2/3 of crumble mixture into bottom of pan. Bake 10 minutes.
  4. Mix raspberries, blackberries, brown sugar, cornstarch, lemon juice, vanilla, lemon zest, and strawberry preserves. Pour over baked crust.
  5. Sprinkle remaining crumble on top. Bake 35-40 minutes until golden. Cool completely before slicing.
