- 1 1/4 cups quick oats
- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 3/4 cup brown sugar
- 3/4 cup melted butter
- 1 cup fresh raspberries
- 1 cup fresh blackberries
- 1/3 cup brown sugar
- 3 tbsp cornstarch
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 2 tsp lemon zest
- 1/4 cup strawberry preserves
Instructions
- Preheat oven to 350°F and line an 8×8 inch baking dish with parchment paper.
- Combine oats, flour, salt, baking powder, and brown sugar. Stir in melted butter to form a crumbly mixture.
- Press 2/3 of crumble mixture into bottom of pan. Bake 10 minutes.
- Mix raspberries, blackberries, brown sugar, cornstarch, lemon juice, vanilla, lemon zest, and strawberry preserves. Pour over baked crust.
- Sprinkle remaining crumble on top. Bake 35-40 minutes until golden. Cool completely before slicing.
Notes
- Bars can be stored in an airtight container or refrigerated for several days.
