Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, stirring in vanilla extract.
  4. Whisk flour, baking soda, salt, and cinnamon together.
  5. Gradually combine dry ingredients with wet ingredients.
  6. Fold in oats, pecans, and corn syrup until dough forms.
  7. Drop spoonfuls of dough onto baking sheet, leaving 2 inches between cookies.
  8. Bake 10–12 minutes until edges are golden and centers are set.
  9. Cool on baking sheet 3 minutes, then transfer to wire rack to cool completely.
