- 1 cup frozen raspberries
- 3/4 cup chilled pineapple juice
- 1/2 cup coconut cream
- 1–2 oz white rum (optional)
- 1 cup crushed ice
- Optional garnishes: fresh raspberry, pineapple wedge, mint sprig, shredded coconut rim
Instructions
- Chill your glass in the freezer for 5–10 minutes. Optional: rim with toasted coconut or crushed freeze-dried raspberries.
- In a blender, combine frozen raspberries, pineapple juice, coconut cream, white rum (if using), and crushed ice. Blend until smooth and creamy.
- Adjust sweetness with honey or simple syrup, and tanginess with a squeeze of fresh lime juice. Add extra pineapple juice if too thick.
- Pour into chilled glass, garnish with whipped cream, fresh raspberry, pineapple wedge, or shredded coconut.
- Optional: create a frozen layered effect by blending raspberries separately from the coconut-pineapple base, or add a frozen banana/vanilla yogurt for creamier texture. Swap berries for your preferred fruit.
