  • 2 cups graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1/2 cup melted butter
  • 1 can (14 oz) sweetened condensed milk
  • 4 oz cream cheese, softened
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 or 9×9 inch pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter; press firmly into pan to form crust.
  3. Bake crust 8-10 minutes until lightly golden; cool slightly.
  4. Beat cream cheese until smooth; add sweetened condensed milk and mix.
  5. Add eggs one at a time, mixing after each; stir in lemon juice, zest, and vanilla until silky.
  6. Pour filling over crust and spread evenly.
  7. Bake 20-25 minutes until center is set but slightly soft.
  8. Cool completely at room temperature, then refrigerate 2-3 hours or overnight.
  9. Lift out using parchment and slice into squares; dust with powdered sugar if desired.
