Description

Cottage cheese cookie dough bark is a no-bake, high-protein treat made with creamy blended cottage cheese, oats, nut butter, and chocolate chips perfect for a quick snack or healthy dessert.

Ingredients

1 cup cottage cheese

1/2 cup natural peanut butter

1/4 cup maple syrup

1 tsp vanilla extract

1/2 cup rolled oats

1/4 cup mini chocolate chips

Pinch of sea salt

Instructions

1. Blend cottage cheese in a blender until completely smooth.

2. Add peanut butter, maple syrup, and vanilla extract. Blend again until combined.

3. Transfer mixture to a bowl. Stir in oats, chocolate chips, and a pinch of sea salt.

4. Line a small tray or dish with parchment paper and spread the mixture evenly.

5. Freeze flat for 2–3 hours until firm.

6. Slice or break into bark pieces and enjoy! Store in the fridge or freezer.

Notes

You can swap peanut butter for almond or cashew butter.

Add-ins like crushed nuts, dried fruit, or cocoa nibs are great mix-in options.

To make it firmer, blend cottage cheese longer and freeze a bit more.
