This simple cinnamon sugar apple cake is light and fluffy, loaded with fresh apples, and topped with a crunchy cinnamon sugar layer!

Apple Cake:

  • 1 1/2 cups brown sugar
  • 1/3 cup oil
  • 1 egg
  • 1 cup buttermilk or (1 cup milk + 1 tablespoon white vinegar)
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 2 1/2 cups flour
  • 2 1/2 cups chopped Honeycrisp apples (see notes)

Cinnamon Sugar Topping:

  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon butter, melted

Instructions

  1. Preheat oven to 325°F (163°C). Mix or whisk ingredients in order given, stirring until just combined. Fold in your apples.
  2. Pour batter into a buttered 9×13 pan (or line with parchment paper).
  3. Combine sugar, cinnamon, and butter with a fork until evenly dispersed. Sprinkle / crumble evenly over the apple cake.
  4. Bake for 45 minutes. Test with a toothpick if needed.
  5. Serve with honey butter or whipped cream if desired.

Notes

  • Apples: Two average-sized apples yield about 2 cups chopped. Honeycrisp or any sweet, crisp apple works best.
  • Types of Oil: Canola or vegetable oil are standard; olive oil adds a distinct flavor. Coconut oil or butter can also work.
  • Honey Butter: Mix 2–3 tbsp softened butter with 2–3 tbsp honey. Add a pinch of sea salt for extra flavor.
