- 2 3/4 cups (358g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup (224g) unsalted butter, room temperature
- 1 cup + 2 tbsp (233g) granulated sugar
- 2 tbsp (28g) light brown sugar
- 1 large egg
- 1 large egg yolk
- 2 tsp vanilla extract
- 1 – 1 1/4 cups Christmas sprinkles
Instructions
- Preheat oven to 350°F (180°C). Line baking sheets with parchment paper or silicone baking mats.
- Combine flour, baking soda, baking powder, and salt in a medium bowl and set aside.
- Cream butter and sugars on medium speed until light and fluffy.
- Add egg and egg yolk; mix until well combined.
- Add vanilla extract; mix until combined.
- Add dry ingredients to wet ingredients; mix until dough is well combined but do not over-mix. Dough will be thick and slightly sticky.
- Create 1 1/2 tablespoon balls of dough. Roll in additional sprinkles to coat. Place on baking sheet.
- Bake 7-9 minutes. Cookies will spread and centers look soft but done. Don’t over-bake. Cookies may be puffy initially and will fall slightly as they cool.
