Ingredients

  • 2 3/4 cups (358g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (224g) unsalted butter, room temperature
  • 1 cup + 2 tbsp (233g) granulated sugar
  • 2 tbsp (28g) light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 1 – 1 1/4 cups Christmas sprinkles

Instructions

  1. Preheat oven to 350°F (180°C). Line baking sheets with parchment paper or silicone baking mats.
  2. Combine flour, baking soda, baking powder, and salt in a medium bowl and set aside.
  3. Cream butter and sugars on medium speed until light and fluffy.
  4. Add egg and egg yolk; mix until well combined.
  5. Add vanilla extract; mix until combined.
  6. Add dry ingredients to wet ingredients; mix until dough is well combined but do not over-mix. Dough will be thick and slightly sticky.
  7. Create 1 1/2 tablespoon balls of dough. Roll in additional sprinkles to coat. Place on baking sheet.
  8. Bake 7-9 minutes. Cookies will spread and centers look soft but done. Don’t over-bake. Cookies may be puffy initially and will fall slightly as they cool.
