  • Base:
  • 1 cup natural peanut butter or nut/seed butter of your choice (creamy)
  • 1 cup gluten-free oat flour or almond flour
  • 1/4 cup maple syrup
  • Topping:
  • 1 cup chocolate chips or dairy-free chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line an 8×8-inch square pan with parchment paper.
  2. In a small saucepan over low heat, mix peanut butter and maple syrup until smooth (about 2 minutes).
  3. Remove from heat and stir in oat flour until combined. Press mixture evenly into the pan.
  4. Clean the saucepan, then melt chocolate chips with coconut oil over low heat, stirring until smooth.
  5. Pour chocolate over the peanut butter base and spread evenly.
  6. Refrigerate 2–3 hours or overnight until firm.
  7. Let bars rest at room temperature for 10 minutes before cutting.
  8. Store in an airtight container in the refrigerator; can be frozen.
