- Oreo Crust: 2 cups (268g) Oreo crumbs
- 4 tbsp (56g) butter, melted
- Baileys Chocolate Filling: 16 oz cream cheese, room temperature
- 1/2 cup (104g) sugar
- 1/4 cup (60ml) Baileys Irish Cream
- 1/2 tsp vanilla extract
- 3/4 cup (127g) semi-sweet chocolate chips, melted
- 2 tbsp natural unsweetened cocoa powder
- 1 cup heavy whipping cream, cold
- 1/2 cup (58g) powdered sugar
- 1 cup chopped Oreos
- Baileys Whipped Cream Topping: 3/4 cup heavy whipping cream, cold
- 1/2 cup (58g) powdered sugar
- 2 tbsp Baileys Irish Cream
- Additional Oreos, for topping
- Mini Chocolate Chips, for topping
Instructions
- Grease an 8 or 9 inch pie pan and preheat oven to 325°F (163°C).
- Combine Oreo crumbs and melted butter, press into pan, bake 8-10 minutes, cool.
- Beat cream cheese and sugar until smooth.
- Add Baileys and vanilla extract, mix until smooth.
- Add melted chocolate chips and cocoa powder, mix until smooth.
- Whip heavy cream and powdered sugar until stiff peaks form.
- Fold half of whipped cream into Baileys mixture, then the remaining half until fully combined.
- Spread half of filling in crust, layer chopped Oreos, then spread remaining filling; refrigerate 3-4 hours.
- Whip cream, powdered sugar, and Baileys for topping. Pipe around edge, top with Oreos and mini chocolate chips. Refrigerate until serving.
Notes
- Pie is best if eaten within 3-4 days.
