Chocolate Covered Strawberry Brownies are a rich and indulgent treat that combines fudgy brownies with sweet fresh strawberries and a luscious chocolate ganache, perfect for any occasion.

Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 pint fresh strawberries, hulled and halved
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Melt butter in a microwave-safe bowl. Add sugar and whisk. Mix in eggs and vanilla.
  3. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually fold into wet ingredients until just combined.
  4. Pour batter into prepared pan and spread evenly. Bake 25-30 minutes. Cool completely.
  5. Arrange halved strawberries over brownies.
  6. Heat chocolate chips and cream in microwave in 30-second intervals until smooth. Pour over strawberries.
  7. Refrigerate at least 1 hour to set ganache. Lift out using parchment overhang and cut into squares.
