Description

Soft, chewy, and secretly healthy, these chickpea no-bake cookie dough bites are vegan, high-protein, and freezer-friendly.


Ingredients

Scale

½ cup nut butter (cashew, peanut or almond)

⅓ cup maple syrup

1 can (540ml) chickpeas, rinsed and drained

½ teaspoon salt

2 teaspoon vanilla

1¼ cup oat flour

2 scoops (¼ cup) protein powder, unflavoured or vanilla

1 tablespoon melted coconut oil

⅓ cup dried, unsweetened coconut flakes

⅓ cup chocolate chips


Instructions

1. Add chickpeas, maple syrup, nut butter, salt, vanilla, coconut oil, oat flour and protein powder to a food processor.

2. Blend until smooth, stopping to stir as needed.

3. Transfer to a bowl and stir in coconut flakes and chocolate chips.

4. Scoop dough into tablespoon-sized balls.

5. Enjoy immediately or chill until firm.

Notes

Protein powder can be swapped for more oat flour.

Store in an airtight container in the fridge for up to a week or freeze for longer storage.
