Instructions
- Prepare the crust by crushing graham crackers into fine crumbs.
- Make the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla until smooth, then add graham cracker crumbs.
- Roll the cheesecake mixture into 1-inch balls and place them on a parchment-lined baking sheet.
- Chill the cheesecake bites in the freezer for 30 minutes until firm.
- Dip the chilled bites in melted chocolate and sprinkle with mini chocolate chips.
- Refrigerate for 15 minutes to let the chocolate set.
