A hearty Cheddar and Herb Soda Bread with fresh herbs and shredded cheddar, perfect for breakfast or as a side for soups and stews.

Ingredients

  • 4 cups all-purpose flour, plus extra as needed
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp each chopped fresh thyme, rosemary, and sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk

Instructions

  1. Preheat oven to 425°F.
  2. In a mixing bowl, combine flour, baking soda, and salt. Stir together.
  3. Add chopped herbs and shredded cheddar.
  4. Add buttermilk and stir until combined.
  5. Turn dough onto lightly floured counter. Knead lightly a couple of times to form a smooth ball. Shape into a 7-inch circle.
  6. Lightly flour a baking sheet. Transfer dough to sheet and dust top with more flour. Score a cross about 1/2 inch deep.
  7. Bake 15 minutes at 425°F, then reduce heat to 375°F and bake another 30–35 minutes until fully baked (bread sounds hollow when tapped on bottom).
  8. Wrap in a tea towel to cool, letting steam soften the crust. Enjoy!
