  • 1 cup all-purpose flour + 3 tablespoons
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup unsweetened applesauce
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla
  • 1 cup grated carrot
  • Topping: 1/3 cup granulated sugar, 1/3 cup brown sugar, 1/4 cup chopped walnuts or pecans, 1 1/2 cups very hot water

Instructions

  1. Preheat oven to 350°F.
  2. In a medium bowl, stir together flour, baking powder, salt, sugar, and spices.
  3. In a smaller bowl, stir together applesauce, milk, melted butter, vanilla, and grated carrot.
  4. Pour wet mixture into dry ingredients and mix to create thick batter; pour into an 8-inch rectangular casserole dish with high sides.
  5. In a separate bowl, combine sugar, brown sugar, and walnuts; spread evenly over batter.
  6. Pour hot water over the top without stirring and bake 40-50 minutes until middle is set, using a baking sheet underneath in case of overflow.
  7. Cool 5-10 minutes before serving; optionally serve with extra nuts and cheesecake ice cream.
