- 1 cup all-purpose flour + 3 tablespoons
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1/2 cup unsweetened applesauce
- 1/4 cup milk
- 1/4 cup melted butter or vegetable oil
- 1 1/2 teaspoons vanilla
- 1 cup grated carrot
- Topping: 1/3 cup granulated sugar, 1/3 cup brown sugar, 1/4 cup chopped walnuts or pecans, 1 1/2 cups very hot water
Instructions
- Preheat oven to 350°F.
- In a medium bowl, stir together flour, baking powder, salt, sugar, and spices.
- In a smaller bowl, stir together applesauce, milk, melted butter, vanilla, and grated carrot.
- Pour wet mixture into dry ingredients and mix to create thick batter; pour into an 8-inch rectangular casserole dish with high sides.
- In a separate bowl, combine sugar, brown sugar, and walnuts; spread evenly over batter.
- Pour hot water over the top without stirring and bake 40-50 minutes until middle is set, using a baking sheet underneath in case of overflow.
- Cool 5-10 minutes before serving; optionally serve with extra nuts and cheesecake ice cream.

- Place casserole on a baking sheet to prevent spills.
